2 c. cooked rice
2 Tbsp. vegetable oil
3 eggs, well beaten
1/2 c. ham, diced
2 green onions, chopped
1/2 c. frozen peas and carrots
1/2 tsp. chicken bouillon
2 tsp. soy sauce
Heat 1 Tbsp. oil in a large skillet. Scramble eggs. Remove eggs from skillet and heat remaining oil. Stir-fry ham and rice (day-old rice works best because it is drier than fresh-cooked rice) until ham starts to brown. Add green onions, peas, and carrots, and stir-fry until vegetables are cooked through. Sprinkle with bouillon and soy sauce. Return scrambled eggs to skillet and mix well.

Easy Cheesy Bread
2 "Papa Pita" - Pita Wraps (you can buy a pack of 10 for $1.99 at Costco - Scott loves making "personal" pizzas with these)
2 cups mozzarella cheese, grated
Italian Seasoning
Onion Powder
Garlic Salt
Butter
Preheat over to 450* F. Thickly spread softened butter over each pita. Sprinkle with italian seasoning, onion powder and garlic salt to taste. Evenly spread 1 cup of cheese on each pita. Sprinkle a little more italian season over cheese. Bake in oven for 10 min., or until cheese is bubbly. Serve with marinara dipping sauce. Serves 2.

Yummy Salad
1. Any type of greens (spinach, romaine, iceberg) or a mixture of any
2. Add any or all of these: craisins, mandarin oranges, apples, strawberries, candied pecans (1/2 C. chopped pecans plus 1/4 C. sugar)
3. Mix pecans & sugar on low heat in a skillet pan, stirring continually. When light brown lay out on cookie sheet to cool
Dressing:
4 T. sugar
1 t. salt
1 t. salad supreme (Schilling spice)
1/2 t. pepper
4 T. apple cider vinegar
1/2 C. vegetable oil
Shake and Stir all ingredients. Put dressing on right before serving
